Recipe
1 egg
1/2 cup orange juice (or you can use milk and make plain muffins)
1/4 cup vegetable oil
1 1/2 cups flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
Preheat oven to 400 degrees. Beat (or whisk) together the egg, juice and oil; set aside. Whisk together the dry ingredients. Stir the wet ingredients into the dry ingredients-- batter should be lumpy. Grease muffin tin (or spray with Pam or Bakers' Joy). Fill muffin cups 2/3 full. Remember to put water into any empty muffin cups (this recipe sometimes doesn't make a full dozen) to avoid burning the pan. Bake for 10-12 minutes. Enjoy!

I made these once before and need to find another opportunity to make them again soon! I haven't ever tried the plain muffin option because these are just too good with orange juice!
Story
My family often had these as a side dish to go with Elbows, but they could go with plenty of other meals or make a nice breakfast :)
