Pumpkin Cookies

cookies

1 stick softened butter

1/2 cup applesauce

1 1/2 cups sugar

1 15 oz can pumpkin

2 eggs

4 cups flour

2 tsp baking soda

2 tsp cinnamon

1 tsp nutmeg

1 tsp salt


Preheat oven to 375 (or convection oven to 350)

Cream together butter, applesauce, sugar, and pumpkin.

Add eggs and mix.

In a separate bowl, sift together flour, baking soda, cinnamon, nutmeg, and salt.

Add dry ingredients to wet and mix.

Grease a baking pan.

Drop spoonfuls of batter onto pan.

Bake for 10-12 minutes. (Convection 10 minutes)

Let cool before frosting.


frosting

4 Tbl softened cream cheese

1 1/2 cups powdered sugar

1/2 tsp vanilla

milk (for consistency)

orange food color

candy corn decorations (optional)


Mix cream cheese, powdered sugar, and vanilla together. If the frosting is too thick, slowly add milk until it's the right consistency. Add red and yellow food coloring until you get a nice soft peachy orange color.


Frost cookies with frosting, then decorate with 1-3 candy corn pieces or a single pumpkin candy corn piece.


My Notes


The pumpkin flavor isn't strong, so people have commented that although they don't usually like pumpkin things, they really like these!


You can also frost the flat side and stick them together like pumpkin whoopie pies :)


Story


My mom adapted this recipe from one that used a lot more butter and sugar, using applesauce instead. My family makes these (almost) every year at Halloween!
